It’s been a crazy couple of weeks for our family.
David has been working odd shifts at different schools around the district, filling in for others who are taking vacation or out on medical leave, so I’ve been doing even more driving than usual. When he’s working 40 minutes from home and his shift ends at 6:30 pm, it makes dinner time very hectic. Normally, we’re sitting down to eat at 6:30 or 7 at the latest, and now we’re lucky if we’re home by 7:30 pm.
I don’t consider myself to be a fantastic cook, by any means, but I do cook about 80% of our meals from scratch and try to make them as healthy as possible, given our tight budget. Unfortunately, it’s those nights when we are out late, that we end up picking up cheap pizzas or hamburgers and fries… and everyone knows that’s not a healthy choice.
